ONION BHAJI
I was sitting in the garden, enjoying the summer sunshine, and suddenly I could see storm clouds gathering. Before long, it started pouring and my mind went back to Mumbai, a city where the first rains in June is something special. The smell of hot earth, when the first raindrops hit the ground, is mesmerising. The whole city cools with the rain, tired after the sweltering heat, and everyone celebrates the onset of the monsoon. One of the most popular ways in which Mumbai residents enjoy this evocative time is by devouring a plate of hot pakodas with a cup of masala chai! I try to recreate these moments here in UK and reminisce about my time in Mumbai!
I am sharing this recipe with you and hope that you enjoy this as much as I do!
Instructions
2 onions thinly sliced
2 green chillies finely chopped
Fresh coriander chopped – 1 Tbsp
1 tsp salt
2 big tbsp gram flour
½ tbsp semolina
Red chilli powder – 1 tsp
1 tsp cumin powder
Turmeric – ½ tsp
Pinch of sugar
Juice of ½ lime
Slice onions thinly, keep them in a bowl. Add fresh coriander, green chillies. Add salt and keep the mixture for about half an hour. Onions will give out water. Add all other spices – turmeric, red chilli powder, cumin powder, sugar and lime juice. Mix well. Now add gram flour slowly and mix well. Add semolina and mix well. Semolina adds the crispiness to pakodas.
The mixture should be of thick consistency, you can add a bit of water at this stage.
Heat oil in a deep kadai, when hot, add the mixture with spoon . Fry till crispy . Each batch should take about 3-4 mins.
Enjoy with green mint chutney and chai!
Paneer-Chana Chaat
This lovely lip smacking starter is made with Paneer and Chick peas, flavoured with fresh coriander, fresh mint and chaat masala, sprinkled with pomegranate seeds.
Murg Masaledar
This chicken curry is made with succulent pieces of chicken, marinated with yogurt and spices and cooked with freshly ground spices and flavoured with curry leaves.
Peas Pulao Rice
long delicate Basmati rice flavoured with cumin seeds and fresh coriander and Peas is a perfect accompaniment!
